Pucuk Ubi Halus Goreng Belacan

English :(Belachan-Fried Tapioca Leaves)
Bidayuh : Tokik Diak (or Tahi Kura-Kura)

Bahan-bahan:
1. 2 ikat pucuk ubi
2. 2 batang serai
3. 2 biji bawang putih diketuk
4. Belacan sebesar ibu jari
5. 1 sudu teh garam halus
6. 2 sudu besar air
7. 1 sudu besar ikan bilis kering
8. 3 sudu besar minyak masak untuk menggoreng secukupnya

Penyediaan :
1. Pucuk ubi ditumbuk halus menggunakan anak lesung.
2. Serai diketuk/dihiris halus.
3. Belacan dicampur bersama garam dan air.

Cara memasak :
1. Panaskan minyak masak. Tumis bawang putih sehingga wangi.
2. Masukkan ikan bilis.
3. Masukkan pucuk ubi yang telah ditumbuk. Goreng selama 10-15min, atau sehingga keluar wangi. Hendaklah dikacau selalu supaya tidak hangus.
4. Tutup selama 1-2 min.
5. Masukkan serai. Kacau seketika.
6. Masukkan campuran belacan. Tambah sedikit garam jika perlu.
7. Kacau sehingga pucuk ubi yang digoreng menjadi kering sedikit.
8. Angkat dan sedia untuk dihidangkan.

Cadangan tambahan :
1. Amat sedap dimakan dengan nasi.
2. Serai boleh digantikan dengan umbut tipuk/tepus untuk menambahkan kewangian (lihat foto di atas)
3. Boleh disimpan di dalam peti sejuk dan dipanaskan setiap kali sebelum hidangan.

omg.. my favourite this 1.. when i was a kid, i used to complain sobab sumuk kuk odak poh the daun ubi oadk alus2... he malas nyam nyek .. pak the results is really heaven to the taste bud.. LOL

yea, nowadays most people are too lazy to koyak the pucuk ubi until very very fine, it tastes not as nice. But still this is one of my favourites!
